Vegetarian Chili

 

Best Vege Chili I have ever made. 

There is likely a better Vegetarian Chili out there, but I haven’t made it!

Ingredients

  • 2 Tbsp olive oil
  • 1½ cups chopped yellow onion
  • 1 cup red bell pepper
  • 2 Tbsp minced garlic
  • 1 medium zucchini, cut into bit size pieces
  • 1 pound portobello mushrooms, stemmed and cubed
  • 1 Tbsp ground cumin
  • 1 tsp chili powder (or to taste)
  • 1 tsp salt
  • 4 large tomatoes, chopped
  • 3 to 4 cups beans, combination of black and/or red kidney beans
  • 15 oz can of tomato sauce
  • 1 cup water
  • ½ cup cilantro leaves, chopped
  • Diced avocado, for optional garnish
  • Green Onion, for optional garnish

Step by Step Instructions

In a large heavy pot, heat olive oil and add onions, bell peppers, and garlic. Cook until soft, about 3 minutes. Add zucchini and mushrooms and cook another 6 minutes. Add spices and stir well. Add beans, tomato sauce and water then bring to a boil. Reduce heat and simmer for about 20 minutes.
