Truffles

 

Takes a Bit of Time, But So Worth It:

I had this recipe tucked away for a couple years before I decided to make them.  Boy Howdy, Why did I wait so long? It rises to one of my favorite recipes because I can create the base chocolate center, but then add an endless variety of extract flavors.

Ingredients

  • 1 ¾ cup chocolate chips
  • 6 Tablespoons unsalted butter
  • 3 large egg yolks
  • 3 Tablespoons heavy cream
  • 1-2 Tablespoons flavoring of your choice
  • 1 lb. dipping chocolate

Step by Step Instructions

Step 1

Melt chocolate chips and butter in double boiler.  

Step 2

Beat together yolks and cream, then add your favorite flavoring.  

Step 3

Mix the melted chocolate with the yolk, beat until smooth and hardening.  

Step 4

Drop by spoonfuls onto a cookie sheet lined with wax paper.  Let chill in the refrigerator for at least 1 hour.  

Step 5

Roll balls in cornstarch and return to wax paper.  Let chill 1 hour.  

Step 6

To dip truffles, melt dipping chocolate in double boiler.  Working quickly, drop candies one at a time into dipping chocolate and turn with fork without piercing candy.  Lift out and tap fork lightly on edge of pan.  Invert candy onto wax paper lined cookie sheet.  Twist fork slightly as candy falls to make a swirl of chocolate on top.  Store in a cool, dry place.  DO NOT FREEZE.
