


Spinach Salad with Hot Bacon and Cherry Dressing

Not your everyday hot bacon dressing:
I make this spinach salad and get rave reviews and requests for the recipe every single time.
Ingredients
- 4 Hard boiled eggs, sliced
- 4 strips Thick bacon, cut into squares
- ½ Red onion, sliced thin
- 4 oz Mushroom, sliced thin
- 5 oz Dried cherries
- 6 cups Baby spinach, fresh
- 4 Tbsp Reserved bacon grease
- 2 tsp Sugar, or to taste
- 3 Tbsp Cherry balsamic vinegar
- ½ tsp Mustard, I prefer Dijon
- Salt and Pepper to taste

Step by Step Instructions
Step 1
In a saucepan, cook the squares of bacon over medium-high heat until golden brown and crisp. Drain on a paper towel lined plate and set aside until ready to use.
Step 2
Drain off all but 3 tablespoons of the bacon grease. Add the sugar, vinegar, and mustard. Stir until sugar is dissolved.
Step 3
Place a handful or two of spinach on each plate and top with eggs, thinly sliced mushrooms, red onions, bacon and cherries. Drizzle with hot dressing and serve immediately.
