


Quick Jambalaya

Jambalaya – Quick with All the Flavor:
If you love Jambalaya but not the time it takes, then try this quick and easy way of making your favorite creole dish.
Ingredients
- 2-3 smoked sausage links, cut into ½ inch slices
- 2 cloves garlic, minced (or substitute garlic powder to taste)
- 2 Tbsp Butter
- ½ onion, chopped
- ½ bell pepper, any color
- 28 ounce can diced tomato, undrained
- ½ tsp Creole Seasoning (or substitute red pepper flakes for kick)
- salt and pepper to taste
- 8-10 shrimp, raw, peeled and deveined
- 1 pouch of quinoa and brown rice (or substitute 1¾ cups cooked rice)


Step by Step Instructions
Step 1
Using a heavy bottom pot, brown the sausage, garlic and onion in the butter. Stir occasionally.
Step 2
When the sausage is thouroughly cooked, add the tomatoes, spices and shrimp. Bring to a boil. Cook until shrimp are opaque, about 3 minutes.
Step 3
Stir in the cooked rice, heat through and serve.
