


Vegetarian Chili

Best Vege Chili I have ever made.
There is likely a better Vegetarian Chili out there, but I haven’t made it!
Ingredients
- 2 Tbsp olive oil
- 1½ cups chopped yellow onion
- 1 cup red bell pepper
- 2 Tbsp minced garlic
- 1 medium zucchini, cut into bit size pieces
- 1 pound portobello mushrooms, stemmed and cubed
- 1 Tbsp ground cumin
- 1 tsp chili powder (or to taste)
- 1 tsp salt
- 4 large tomatoes, chopped
- 3 to 4 cups beans, combination of black and/or red kidney beans
- 15 oz can of tomato sauce
- 1 cup water
- ½ cup cilantro leaves, chopped
- Diced avocado, for optional garnish
- Green Onion, for optional garnish

Step by Step Instructions
In a large heavy pot, heat olive oil and add onions, bell peppers, and garlic. Cook until soft, about 3 minutes. Add zucchini and mushrooms and cook another 6 minutes. Add spices and stir well. Add beans, tomato sauce and water then bring to a boil. Reduce heat and simmer for about 20 minutes.
